On behalf of the organizing committee of the 5th International Conference on Polyphenols and Health (ICPH), it is our pleasure to invite you to this international conference, which will take place at the Hotel Meliá Sitges, Sitges (Barcelona), Spain, from 17th to 20th October 2011.

Since the initiation of ICPH by Augustin Scalbert in Vichy, France, in 2003, this biennial conference has succeeded in raising the interest in polyphenols and their effect on health and has encouraged more researchers to engage in this field. There have been three more conferences since then: the 2nd ICPH took place in the United States, hosted at UC Davis, the University of California; the 3rd in Kyoto, Japan; and the most recent in Harrogate, UK, in 2009, with the same high levels of attendance and scientific expertise being maintained each year.

Polyphenols are widely recognized today as functional components of foods, beverages and plants, demonstrating a potential role in the protection of human health from chronic diseases through multiple mechanisms of action. However, the specific actions explaining the involvement of polyphenols in protecting health remain unclear, thus necessitating a multidisciplinary approach to establishing functional and safe levels of intake in different situations.

The 5th International Conference on Polyphenols and Health will include sessions on a wide range of related topics, such as polyphenols in food plants, methodology, bioinformatics and metabolomics, biomarkers, polyphenols matrix effects, digestion, absorption and metabolism in the gastrointestinal system, microbiota effect, relevant health-promoting effects on the cardiovascular, nervous, renal and respiratory systems and on the ageing process, cancer, the metabolic syndrome, obesity, diabetes, the role of polymorphisms and molecular biology, the issue of inflammation versus oxidative stress.

We do hope you all enjoy the next four days as you interact with colleagues and discover more about the latest trends, topics and developments within the world of polyphenols and health science.
